apple cider ice cream recipe

ingredients

2 eggs

3/4th C sugar

2 C apple cider

2 C heavy cream

1 C milk

1 C cubed apples

1/2 lemon

tiny pinch of cinnamon

This recipe is made for an ice cream machine! :X

Reduce 2 cups of apple cider to about 1/2 cup by cooking on a pan on medium-low heat. Make sure it’s at a boil.

Skin an apple and cube it into 1/4th inches and mix with juice of half a lemon. Set aside in fridge.

Create a sweet cream base by first beating the eggs for 1-2 minutes, then adding the sugar and beating till smooth. Afterwards add the heavy cream and milk. Let the apple cider cool off before adding to mixture. Add a smol pinch of cinnamon to the batch, which will net approximately 1 quart of ice cream.

Churn ice cream to your machine’s instructions. In my case it takes about 20 minutes. Wait until the last 2 minutes (after 18 mins in my case) to add in the apple chunks. Afterwards put into container and freeze for 2-3 hours till done!

This recipe is pretty mild in the apple flavor, but is still quite nice as a light desert. I use raw sugar so my ice creams are a bit more molasses-y but the chunks of frozen apple are a nice burst of tartness :)

I ate this ice cream recently with a soft madeleine cookie (my fav!) and a heaping of cut up fresh strawberries. I bet this would also be great with some granola and honey!
